Happy Thanksgiving from Takeout Kit!
While we don't have a Thanksgiving meal kit to send you this year, we DO have a solid plan for using those turkey leftovers! Because as great as those leftovers are the first few days, we're guessing that you'll eventually need to switch it up.
With this recipe you can turn the last of your picked turkey (or frozen leftovers) into a creamy Indian curry sauce with basmati rice. Our Turkey Tikka Masala recipe features:
Start with making the basmati rice. Add spices like cinnamon, cloves, Himalayan pink salt, and ghee to enhance the flavor of the rice. Optional: soak rice in water for 20 minuted before cooking to elongate the grains of rice.
Add the rice, spices, and salt to a saucepan or rice cooker. Add water and bring to a boil. Cover and reduce heat to low and cook for 20 minutes. Remove spices and fluff rice with a fork to release excess moisture.
The Tikka Masala comes together fast, so continue with the recipe while the rice is cooking.
Sauté chopped onion and garlic in butter, ghee, or your favorite cooking oil.
Add in Tikka Masala spice blend, chili powder (optional). Stir, turning down heat, until a paste forms.
Add crushed tomatoes, leftover turkey or chicken, and coconut milk or cream. Add sugar and salt to taste.
Simmer for 10 minutes to incorporate the flavors.
Serve with spiced basmati rice.
