Our shop is not taking orders right now. Paella is one of the few dishes where the equipment genuinely is the recipe, so here is what I would buy: the pan, the rice, and the spice you cannot substitute.

  • Garcima 16 inch Pata Negra Paella Pan
    Why this brand: Garcima is made in Valencia and it is what the restaurants there use. The point of a paella pan is that it is wide and shallow, so the rice cooks in a thin layer and forms the socarrat, the caramelised crust at the bottom. A deep pan gives you rice stew.
  • Matiz Espana Bomba Paella Rice, 2.2 lb
    Why this brand: bomba is the whole trick. It absorbs three times its volume in stock without turning creamy the way arborio does, which is why paella has separate grains and risotto does not. Do not stir it, and do not substitute long grain.
  • Spanish Saffron Threads, La Mancha
    Why this brand: La Mancha is the protected Spanish origin, and this is a small jar at a sane price rather than the tourist tins. Steep a generous pinch in warm stock before it goes near the pan. Never buy powdered saffron, and never buy the yellow stuff labelled Spanish seasoning.
